Italian Gluten-Free Flour
Our gluten-free flour mix comes from Italy where it is famous among Italians for making wheat-based foods like pancakes. The ingredients are tested for glyphosate and other herbicides and pesticides, including also testing for heavy metals. These Italian gluten-free flours are milled in a place where there is no exposure to other gluten products at all.
Many gluten-free flours sold in the United States come from plants that are often subjected to being sprayed with herbicides and pesticides, particularly glyphosate, which can negate any health benefits for those suffering from gluten intolerance diseases.
The main ingredient in this Italian gluten-free flour is ground Fava bean (also known as "Broad bean") flour. It is an ancient bean with a history that spans thousands of years, due to it being very hardy and easy to grow.
Fava beans are high in protein and fiber, and they are also a good source for manganese, copper, iron, potassium, and magnesium. Fava beans are also high in antioxidants.
The second main in ingredient in our Italian gluten-free flour mix is Buckwheat. Despite the fact that "wheat" is part of its name, Buckwheat is not a grain and is not even a grass.
Buckwheat is a seed from the plant Fagopyrum esculentum, and is therefore naturally gluten-free. This nutrient-dense seed has been a part of traditional diets for thousands of years. Like the Fava bean, Buckwheat is high in antioxidants and many of the same minerals found in Fava beans.
We think the Italians have a winner in this gluten-free flour mix, which is why we decided to import it to the U.S. for American consumers who have gluten intolerance problems.
