We are excited to bring you the option of stocking up on our premier beef from our 100% grass-fed Galloway herd!

We only process our famous Galloway beef during a short window of time each year starting in October when the herd is still grazing on green grass. Due to pressures on small family farmers this year during a time of economic uncertainty, as well as the economic pressures to ecommerce retailers like ourselves, we are unsure about our ability to continue selling this wonderful grass-fed and grass-finished Galloway beef online throughout the course of the next year ahead of us.
Therefore, in order to secure as many head of Galloway cows this year as possible from our small-scale family farmers, for a limited time we are offering bulk half cows sent directly from the butcher shop. This will allow you to store some of the finest grass-fed beef in your own freezer for a fraction of the cost it would take to place multiple orders throughout the year, even if we survive the current economic times.
For each of these options you will need to plan to have approximately 4.5 cu. ft. of chest freezer or a 5.5 cu. ft. upright freezer space to store your beef.
Each of these options represents approximately a half a cow portion from one of our prime Galloway steers that are roughly 2 years of age. Your half will include 150 pounds of beef and will be delivered cut and packaged right to your door.
That is an amazing $16.99 lb. DELIVERED! When you buy a half cow, your price per lb. is the same for all of the cuts. So a $60 per lb. retail price on a premium steak like a filet, for example, is the same price per lb. as your ground beef, which in this package is your delivered price including shipping.
All 4 options have a guaranteed 3 Day shipping expense included for most locations within the lower 48 states. However, there may be instances where the shipping expense for rural or remote locations are much greater than what is included. If you are in a remote location with a drastic increase in shipping expense, we will contact you with a custom shipping quote for you to approve before finalizing your order.
Our shipping boxes are made from non-Styrofoam insulation and can be composted, or it will breakdown in the trash very quickly. We pack each box with a large amount of dry ice to ensure it will make it to your door without getting above a safe temperature. You may see some slight thawing, but that is acceptable.
If for some reason your package delivers and there is significant thawing, please don't dispose of the product but contact us right away and we will make sure you are completely satisfied with your purchase.
We also offer local pick up direct from our farm partners near Viroqua, Wisconsin if you want a lower price without shipping. Please contact us if you are interested in that option so we can give you a custom quote and can coordinate a pickup time for you. We are generally within a one day round trip location on the I 94 corridor that runs from the Twin Cities in Minnesota to Madison and then to Milwaukee in Wisconsin, to Chicago.
Our next processing date will be before the end of October, and this is a first-come first-serve offer whiles supplies last, as our farmers have a limited amount of cattle to be processed. So to reserve your bulk purchase, please order right away while these half cows are available.
If there are more cows available in November, we might be able to offer more of these packages by the end of November.

Grass-Fed Beef
100% Grass-fed
Grass-Fed Traditions currently supplies 100% grass-fed beef from small-scale family farms in Wisconsin.
How do we define “grass-fed?”
The cows are on pasture, not in feed lots eating silage. They are also finished on grass, and do not eat grains at all.
We don’t process animals in the winter or early spring, when they are only eating dry grass. Our animals are eating green grass right up to the time of processing, and are dry aged before packaging.
Many sources of “grass-fed” beef today are simply from cows in feedlots eating silage year round.
Our cattle are never treated with antibiotics or hormones, and they are treated humanely right up until the time they are processed at a family-run small scale processing plant in Wisconsin. We never use vaccines, including mRNA vaccines, with our animals.
The CLA Advantage
Conjugated Linoleic Acid (CLA) is a naturally occurring free fatty acid found mainly in meat and dairy products in small amounts. CLA was discovered by accident in 1978 by Michael W. Pariza at the University of Wisconsin while looking for mutagen formations in meat during cooking.
The most abundant source of natural CLA is the meat and dairy products of grass-fed animals. Research conducted since 1999 shows that grazing animals have from 3-5 times more CLA than animals fattened on grain in a feedlot.
Simply switching from grain-fed to grass-fed products can greatly increase your intake of CLA. (Dhiman, T. R., G. R. Anand, et al. (1999). “Conjugated linoleic acid content of milk from cows fed different diets.” J Dairy Sci 82(10): 2146-56.)
Omega 3’s
Omega 3 is an essential fatty acid for human growth and development. We must have it to be healthy.
Grass-finished beef is a great source for this essential nutrient. The source of Omega 3 is the green leaves of plants. When cattle eat their natural diet, beef becomes a great source of Omega 3.
Grain is not a rich source of Omega 3, so standard, cattle-finishing practices cause the Omega 3 level to decrease dramatically.
Galloway Cattle
Galloway cattle are an ancient breed that originated in the rugged hill country of southwestern Scotland. They are related to the Angus which was developed in northeastern Scotland.

While the Angus was selected for rapid growth on better feed, the Galloway was selected for its ability to thrive on poor forage in a cold wet climate.
They are a very ancient and rare breed, numbering only about 26,000 worldwide, with most herds located in Europe. They were first imported to the states in the 1850s and are very rare in the U.S., and we are one of the few retailers offering them to the public.
The Galloway, unrivaled as a grazing breed, utilizes coarse grasses frequently shunned by other breeds. They have the ability to produce a high quality beef product directly from grass.
Results of a multi-breed research project conducted by a Canadian Government Experiment Station, reveal that the Galloway ranks second only to the Buffalo in hair density tests.
The robust, hardy nature of the Galloway is especially suited for northern harsh climates. The claim that Galloway beef is juicy, tender, and flavorful is substantiated in recent USDA tests of Galloway crossbreds, when compared with eleven other breeds.
Results of the Cycle IV Germ Plasm Evaluation (GPE) Program at the USDA Meat Animal Research Center (MARC), Clay Center, Nebraska, showed the Galloway crosses placing at the top of the chart for flavor, juiciness and tenderness.
